The Deal

Sate appetites with the freshest seasonal catch assembled into a decadent menu by the Master Chef Thomas Kok. Starting off with a century egg and homemade tofu, the nine course set meal quickly takes a more aquatic slant with a kaleidoscope of Hokkaido salmon, tuna, scallop and botan ebi (large prawn) sashimi, followed by Grilled Hokkaido Ginkarei (halibut fish) exclusively air-flown from Northern Hokkaido.







These recently deceased sea creatures are chased by the main act of the set - succulent Wagyu tenderloin beef cooked to perfection and accompanied by a chorus of mixed mushrooms.





Continuing the epicurean adventure, Master Chef Thomas Kok’s jolly underlings will bring forth the Steamed Custard Egg with Hokkaido Salmon Roe and the Signature Hokkaido Maki, a compact sushi roll with deep-fried seafood wrapped in seaweed and topped with Flying Fish Roe. Finally, diners willing to stuff even more amazingness into their already crammed tummies can savour the scrumptiously succulent Hokkaido King Crab in the Hokkaido Taraba Udon.

 


Master Chef Thomas is appointed as the only South East Asian dealer of Sapporo Chuosuisan Co Ltd, the biggest fish supplier in Japan. As such, Hokkaido Sushi Restaurant's fish is all flown fresh twice weekly straight from Hokkaido and can be trusted to be of the highest quality.

It was a great dinner. While sitting at the counter did not foster a lot of conversation, we managed to entertain ourselves. Chef Jack Tan was managing the Sushi Counter when he taught us the proper and most delicious way to eat sushi. Actually, the spicy, peppery Shiso leaf sushi was pretty good. "
