The kitchen is helmed by renowned sushi chef Thomas Kok, who materialised his love for Japanese food and soon began his cooking journey at the age of 16. Cultivating new culinary concepts and recipes, the executive chef was the first to grace Singaporeans with omakase, a Japanese phrase that translates to “I’ll leave it to you”, allowing patrons the sense of gambling and surprise as the chef hooks them up with unsuspecting fishes.
